This is one of my personal favorites. Find or make fresh pizza dough. I get mine at Whole Foods. It comes in a whole wheat variety and needs only to be rolled out before use. Nothing is easier. Before making the pizza, prepare an olive oil spread. Take 2 cloves raw garlic (or more, if you’re terrified of vampires and don’t enjoy social contact), and crush it into 3-4 tbsp olive oil. Add oregano, rosemary, basil, or cilantro for a more Mediterranean feel. Fresh herbs are the best, but dried will do. I like to sprinkle on some Vegan Parmesan cheese, which adds flavor and spice without the use of animal products. Let these sit in the oil for as long as you’d like (the longer it sits, the more infused with flavors). Roll out your dough to whatever thickness you prefer, make some small dents with a spoon or your fingers. These just make nice little pockets for flavor. Drizzle the oil mixture on your dough and spread it around. Use the tomato sauce from last night’s Buckwheat Pasta and SuperSauce meal. Spread it to the edges. I like to chop fresh cherry tomatoes on top of this for an extra tomato-y lycopene blast in every bite.
Now, expand your mind and choose a vegan cheese alternative. I know what you’re thinking, and stop right there! Try a brand like Follow Your Heart Mozzarella. When this pizza is finished, you and your most cheese-loving friends will not be able to tell the difference, or even care. It offers plant-based proteins, is non-GMO, and even gives the calcium you would fine in milk-based mozzarella. Honestly, it melts and is delicious on this pizza. Just give it a try.
If you insist on real mozzarella, at least choose an organic and grass-fed cow version. It should be fresh. *A note: always remember to read your ingredient labels. The fewer, the better. Forget the processed and artificial garbage!
Ok, your pizza is assembled. Now slap that baby in the oven! 400°F for 10-15 minutes should do it. Just keep checking it. You want the dough cooked first and foremost. If your dough is close to done, but the cheese is still not melted, just switch to a high broil until the cheese is melty and beginning to brown.
