SuperDiet: Day 5

Breakfast: Muesli with Acai and Kefir
Lunch: Kale with Apples and Sliced Avocado
Dinner: Caribbean Salmon with Quinoa and Squash

Kale with Apples and Sliced Avocado
Saute 3 cups chopped kale with plenty of crushed garlic in olive oil. Cook for 5-6 minutes over medium heat. Add 2 tbsp. lemon juice near the end. Cut 1 whole crisp, juicy apple into small cubes. Serve these alongside the fresh kale. The cold crispness of the apple goes perfectly with the tangy heat of the kale.

Slice 1 medium avocado and sprinkle with freshly ground pepper and sea salt. Avocados are full of “good fats”, and as long as the rest of your day is not filled with Fritos, ice cream, and buttered popcorn, you’ll be obtaining a great balance of heart healthy mono- unsaturated fats, not to mention “good” cholesterol, fiber, potassium, vitamin E, and magnesium.
